Makes 4 tacos, double the recipe for 8!
1 eggplant, cut into 1-inch cubes
2 Tbs Meru Miso’s Fresh Sweet Red Miso
1 1⁄2 Tbs sweet chilli sauce
1 Tbs tamari
1 Tbs seasame oil
1⁄2 Tbs rice wine vinegar
Wasabi mayo/sour cream
Preheat the oven to180 °C and line a tray with baking paper. Combine all ingredients into a bowl and let marinate for 15-30 minutes.
Place all the eggplant and drizzle with any remaining marinade and roast for 20-25 minutes until soft in the middle and roasted on the outside.
While the eggplant is roasting, get all your chosen toppings ready in small bowls.
Heat tortillas according to the package, wrap heated ones in a clean tea towel to keep warm until ready to use.
Place cooked eggplant and warmed tortillas on a table with all your toppings for people to create their own personalised tacos.
