Peanut Butter + Crunch + Miso, could you ask for a more perfect line-up of ingredients?! This sweet, savoury and peanuty recipe has a short ingredients list and is no-bake! Easy and fun!
2 cups puffed rice
1⁄4 cup coconut oil, melted
1⁄4 cup peanuts, chopped (plus more to sprinkle on top)
2 Tbsp peanut butter
2 Tbsp coconut nectar*
1 Tbsp Meru Miso’s Fresh Sweet White Miso
Pinch of salt
Edible flowers (optional)
Line a cupcake tray with 8 patty pans.
In a large bowl, combine the puffed rice and 1⁄4 cup of chopped peanuts. In a smaller bowl add the melted coconut oil, peanut butter, coconut nectar, miso and a pinch of salt and stir till combined.
Pour the peanut miso mixture into the puffed rice and peanuts and mix well.
Transfer to the patty pans and pop in the fridge for around an hour to set.
*You can use any liquid sweetener, such as maple syrup, honey or brown rice syrup.
